If you’re a fan of salmon then you will love the following recipe. It consists of succulent smoked salmon that is served with a dill sauce, pickled onions and crusty rye bread.
I usually manage to get a crusty loaf of Nordic inspired bread from my local bakery and it is usually a rye bread that has loads of seeds and nuts in it. A good substitute would be any hearty rye bread.
Ingredients:
- 1/2 red onion
- 1 teaspoon of sugar
- 1/4 cup of apple cider vinegar
- 1/4 cup of water
- Slices of smoked salmon
- 1/4 cup yogurt
- 1/4 cup mayonnaise
- handful of dill
- Chopped lettuce.
- Salt and pepper to season.
Pickled onions
Begin by thinly slicing half a red onion and crushing a few peppercorns and coriander.
Bring 1/4 cup of vinegar, 1 tablespoon of sugar, 1/2 teaspoon of salt and 1/4 cup of water to simmer in a pot.
Turn off your heat, and place your onions and spices in the warm vinegar solution. Let it soak for 20 minutes then drain the liquid.
Dill Sauce:
Mix 1/4 cup of yogurt and 1/4 cup of mayonnaise with a handful of chopped fresh herbs like dill. Season with salt and pepper.
Assembly:
Slice your bread in half and toast it for 3 minutes.
Spread your dill sauce, some lettuce, some slices of smoked salmon and the pickled onions.
